Arroz con Leche

So today it is 28 degrees outside with a roaring wind. We have company coming for dinner tonight! I need to work on my Guatemalan desserts…so I decided to make arroz con leche (rice pudding). I was going to make mango cheesecake, although cheesecake is not Guatemalan, mangoes sure are, but its not the most figure friendly dessert. I also thought of flan……but it is really not the most healthiest dessert…what with the cream and all those egg yolks. So arroz con leche it is! Plus I have all the ingredients in the house. The rice is simmering on the stove with the zest of 1 lime, one cinnamon stick (actually 2 because we LOVE cinnamon) and a pinch of salt.
