Brian Knowles is The Gringo Chapin! I have grown up in restaurants all my life and have cooked since I was old enough to hold a spoon. As I grew older my love for food grew and along with it my love for travel. In the Spring of 2000 I met and fell in love with a Guatemalan now living in the Boston area since he was a child. Believe it or not it was almost 5 years later before I made my first trip to Guatemala! Boy was I nervous traveling down there with Carlos’ entire family.  It was love at first sight and taste for me and Guatemala. From the first moment I stepped foot outside of the airport terminal and ate lunch at Aida’s….I knew that this was going to be a life changing trip. This is where the true story begins and my life changed…..once I got home I wanted to learn how to cook all the amazing foods we had in Guatemala. I got so frustrated because I could not find a Guatemalan cookbook or at least one in English. So I decided to learn to cook “Guatemalteca” from Carlos and his family and from research online. While doing this I decided to keep a blog about my journey to discover this great cuisine. It was mostly for me and my friends and family….but it  has since grown into something far bigger….the persona of The Gringo Chapin. This is just the beginning so come along for a great and delicious journey!
